Keto Peanut Soup

Peanut Soup is probably the most iconic Chinese New Year dessert. It has always been a crowd-favourite, and now -ketogenic. Simply add sugar substitute Swerve for a sweeter taste, and xanthan gum to give it a lusciously thick and smooth texture. One bowl won’t be enough!

Ingredients

  • 100g SK Peanut Butter
  • 70g cream
  • 200ml water
  • ¼ tsp salt
  • 2 tbsp swerve
  • ¼ tsp xanthan gum
  • Garnish, chopped peanuts

Instructions

  1. Put all ingredients into a small saucepan and stir on low heat until ingredients are well incorporated
  2. It's ready to serve once the peanut soup is thickened and smooth
  3. Garnish with some chopped peanuts and serve warm

Tip!

You can use any nut butter to replace peanut butter for an equally delicious dessert soup
